In this Photoshop tutorial, you will learn how to extract from a shape. Just follow the steps of this free Photoshop tutorial and you will see how easy is to extract from a a shape.
Select the Custom Shape Tool and draw the shape you want to extract from. Select the Pen Tool and change in the upper menu the "Shape layers" setting with the "Paths" setting and Change "Add to path area" with "Subtract from path area".

Now, in the layers window, select the Vector Mask of your shape. Now start drawing with the pen tool inside your original shape. Then you close the path you draw the new shape you just created is cut off from the original shape.

When you close the path you draw the new shape you just created is extracted from the original shape.

You can add more points to it with the Add Anchor Point Tool to model your extracted area better.

If you want to cut an existing shape from another shape, just select the Custom Shape tool, with the two options in the upper menu checked: "Shape layers" and "Subtract from path area". Then select the shape you want to cut off and start drawing it over the Vector Mask of the other shape, the one you want to extract from. Make sure The vector mask of that shape is selected in the layers window before you draw the new shape.

You can see the result here. I've cut the musical sign shape from my original shape.
